I would occasionally buy energy bars from the supermarket, to have on hand when a pre-cycle boost is required. I have had some dried figs in the pantry for a while, and have also been having Medjool dates to cure sugar cravings. Having some time on my hands this weekend I decided to make my own energy bites. I have noticed on the ingredients of natural energy bars, that the base ingredients are fairly straight forward. Dried fruit for the texture, seeds/oats for binding. So here is what i came up with.
Here we go…
Ingredients:
- 15 dried figs
- 7 medjool dates
- 1/4 cup almond butter
- 1/4 cup milled flax and chia seeds
- 3/4 cup oats
- 1 tsp vanilla extract
Method
- Put all ingredients into a food processor.
- Pulse a few times to loosely combine, then with a rubber spatula, scrape down the sides of the bowl. Blend and pulse for 2-3 minutes, until the mixture begins to clump and sticks to the sides of the bowl, stopping to scrape down the bowl as needed.
- Portion the mixture into your hands, around 1 tbsp at a time, then roll the mixture into balls.
- Store in an airtight container in the refrigerator for up to two weeks.
